Abstract
THE PLACE AND IMPORTANCE OF TRADITIONAL CEREMONIAL KESHKEK IN TURKISH GASTRONOMY
Keshkek, one of the most important components of Turkish cuisine, is a cultural element that shapes many social perceptions and practices around its physical existence. This cultural element, which has been at the center of 14 different social organizations from past to present, was included in the Intangible Cultural Heritage list by UNESCO in 2011 due to its characteristics. This study is designed to determine and record the intangible cultural aspect of the keshkek. Within the scope of the study, firstly, the current literature on the subject was examined in detail; then, in-depth interviews were made with intangible cultural heritage transmitters. The data obtained as a result of the interviews were classified on the basis of the ceremonies with which they were associated and subjected to evaluation. As a result of evaluations, from oral culture products of Keshkek food to performing arts; It has been determined that it plays a decisive role in almost every section of social life, from rituals and feasts such as engagements, weddings, births, and newroz to knowledge and practices related to nature and the universe.
